"Are you talking about Ceviche?"

It's when Christina Yang uttered those words on Grey's Anatomy in season 6* that was the first I had ever heard of ceviche. I had to google it to understand the reference the insensitive, yet hilarious doctor was making about a woman who got into a fight with a boat propeller and lost.


Fast forward to the present and my coworker trying to recreate the fabulous dish she had on vacation with her family in Miami. It was shocking to find out that ceviche is raw fish that is essentially cooked via the acids from citrus. Being a sushi nut, I was skeptical but willing to give it a try. I was hooked on a single bite.







The beauty of ceviche is that you can put any spin on it you'd like.

My version pictured was made as so:

(this was a single serving that I ate on it's own for lunch)

One tilapia fillet (4oz or so)
Three limes
1/4 cup chopped yellow onion
1/2 teaspoon dried basil
1/4 cup tomato

::These measurements are estimates, I did not actually measure the ingredients out when I made it, use amounts that suit your taste::

Juice limes into a plastic or glass food container that has a lid to seal it. Chop fish into bite-sized chunks, add to lime juice. Add chopped onion to juice and fish. Mix in basil. I let my ceviche marinate in the fridge over night. If you're eating it the same day I'd let it rest for a couple hours and take note of the color change from pinkish to white, more cooked appearance. I added the tomatoes a couple hours before I planned on having lunch so they wouldn't be too soggy. Just add them with the rest of the ingredients if you plan on eating it the same day. That's it! 

It's so neat how the juice transforms the fish and even begins to break down the onion into a sweeter version of it's raw self.

More on the beauty of ceviche:
  • You can mix/substitute citrus - oranges, limes and lemons - Oh my!
  • You can use any spice that you prefer. This dish is typically made with cilantro but I hate cilantro. 
  • You can mix in any veggie that strikes your fancy.
  • You can use the marinaded meat to make fish tacos! NOM, NOM, NOM!

* I had to look the info about what season of GA Christina said the ceviche comment. I'm not a freak who just knows trivial things like that.

Ceramic Egg Cartons Make Me Happy

...that's basically it. I bought two of these ceramic egg cartons at Ross this week for $2.50 each. I would have bought more but two is all they had. There is no name on them and I couldn't find a version like them when I checked eBay and Amazon.





I just love looking at them in my fridge or on my counter.

I was making EatingWell.com's vegetable fried rice when I took these pictures. The recipe is fantastic, a couple of my omissions include: the ginger & the hot red pepper sauce. I used less garlic and I will use less soy sauce next time (coming from a lover of soy sauce).

Relics of Workout's Past


I was obsessed with Minna Lessig (blonde on the left) back in the day. She was my Jillian Michaels of 2000-2004, I did her tapes religiously and actually saw results. I can't believe it's been so long since I've visited her. 

As I was finishing up day 3 of the 30 Day Shred (again), I found myself reminiscing about the VHS tapes of yore that I used to get in shape during high school... I'm not one to save things so I was pleasantly surprised to find these two in our stash of movies we don't watch! 

I think my best friend Jill actually gave me these tapes and I knew I had bought another tape of Minna's but quickly remembered that I wore that sucker out, so... Amazon to the rescue! For $2.99 flat I will have my missing VHS by Tuesday, I can hardly wait! In the meantime I plan on doing Minna's workout through Quick Fix: Arms & Legs tomorrow morning ; )

Friday Fancies: Food & Jewelry

This is going to be a shorty, I have a Finance exam on Tuesday so I'm freaking out!

First of all, I've been a smoothie maniac for the last month, averaging one every other day. Smoothies are a great meal filler when, frankly, I have no time to think about making something for myself. I decided to share my favorite thus far with you, I'll call it the Bodacious Banana Smoothie : )


Ingredients:

1 & 1/3 bananas (this is only b/c my daughter had a piece of leftover 'nana)
3 heaping tsp. peanut butter
1 scoop Jillian Michaels' Whey Protein in vanilla
1 handful of crushed ice (sorry no specific measurement, just add enough ice to make the smoothie cold and a little thicker)
Milk (no specifics on this one, I usually use less than a cup of 1% milk because I like a thicker consistency, more like a milkshake; it just depends what thickness you prefer)
Blend!

There was more leftover from after I poured this in the glass. I drank all of it.

Secondly, I have found that I have to force moderation on myself with any "snack" food I buy because I'm a student who munches non-stop when studying, I have zero self control, and I will polish off a container of anything in one sitting. Not good!

My solution is to split up snack foods immediately so I do not have the chance to keep going, and going, and going... until I have to have my test-proctor-man come and give me my exams at the house because it's too expensive to cut me out of it! 

Finally, the pretties! I've been reaching for these pieces of jewelry that are bargains yet fast becoming staples in my day to day look.

These are sweet (haha) and not too bold so the people who would criticize them haven't even noticed and the people who love them have. I love how that works! I looked for them on the site tonight and couldn't find them but I encourage you to look at the rest of the $1.50 earrings on F21's site, they're darling and you can't beat the price!

Not to be cliche but I really do wear this ring quite a bit, it seems to go along with a lot of my wardrobe. I'm also really loving white for the summer, it's so refreshing.

Friday Fancies

In order to get myself more disciplined about posting I wanted to have a weekly post where I can at least check-in and let anyone out there who cares know what I'm into as of lately. If you follow me on Twitter it may not be hard to figure out so if you think I'm being redundant just, click-away...


1. Workouts
To make a long story short, I may come off as a workout fanatic and to an extent I am because I was a fat kid. I started working out in the summer between seventh and eighth grade because I decided I didn't want to be fat anymore. My main motivator was my best friend, we motivated each other because we were around the same size and wanted to be healthy. Before I started working out, the last time I had weighed myself was in sixth grade and I was over 180 pounds. The delightful thing about working out and watching what you eat is that it works... The hard part is that you can never stop (at least I can't, not with this metabolism). So I give you what has been keeping me motivated this week:


Tuesday: 40 Minute, 5 Mile Bike Ride while pulling my 2 year-old in her trailer (pulling over 55 lbs), exhausts me to the core and we make a pit-stop at the park, little does my daughter know: we take the looong way to get there!


Wednesday: My new obsession, the Tone It Up Girls! Their new workout is a killer and I'm pretty sure why it hurts to laugh! You can find more of their info and workouts on YouTube.


Thursday: No matter who else comes along, there will always be Jillian in my routine! I'm on level two of her Yoga Meltdown and will stay there until I master all the moves!

2. Beverage
Starbucks has coconut now and after trying it in a frappuccino and most recently in a cappuccino, both of which were topped with whipped cream and toasted coconut I've decided that I cannot choose between them. It just depends if I want something hot or cold.
NOTE: This is not on the "eating well" tip and clearly a splurge!

3. Etsy
Researching supplies, inspiration, and more formal graphics for MY SHOP along with more formal shipping accouterments - I can't get enough and I feel so inspired. I have a list going of what I want to implement and hope it all comes to fruition!


4. Music
I like all music, some of what I'm loving lately... 
Country - "Dirt Road Anthem" Jason Aldean (it's different, not what you hear every day). 
Rap - "6' 7'" Lil Wayne feat. Corey Gunz (explicit) & "Moment for Life" Nicki Minaj & Drake (gets my workouts pumped, inspirational). 
Alternative - "Tighten Up" The Black Keys (just plain funky).








5. Style
I've decided I need more turquoise in my wardrobe, so I've been seeking it out and bought a special little beauty to make a one of a kind piece of jewelry. I can't wait for all the elements to arrive and will be soon to share the finished product!

Quick Tip, Surprises, and Nail Polish

I had a movie date set up with my good mommy friend, Beth, to see Bridesmaids today. My daughter was going to her grandparents for the afternoon and chose a very cute Gymboree shirt to wear. While the shirt is adorable, it's also a pain because the flower on the back always comes out of the dryer looking like a blob. Well, I did not have time to iron it and I usually stay away from the iron in general because I have been known to singe clothes in the past. I was doing my hair and had a stroke of genius: I was using my straightener anyway so I took my daughter's shirt off her and quickly "straightened" the bow and sleeves of her shirt. It didn't produce a perfectly pressed shirt but it got it to look decent.

I recommend this if you are crunched for time and just need things to look "ok". Use a med/high setting on your straightener, not full blast. I only clamped the straightener on each section of the bow for a second or two and swiped it along the sleeves. 

After rushing out the door and dropping my daughter off I met my friend at the movie theater and she came in carrying a BIG box... She got me a gift "just cuz"! When people do sweet things for me I can hardly believe I deserve it, so you can imagine my surprise when I opened the box and she had gotten the tea/coffee mugs I wanted from Pier One (mentioned here)!

We barely have counter space so I may play around with where I place them, but here they stand for now : )
Can't wait to have my nightly dose of Organic Throat Coat tea tonight!

Beth and I also share a nail polish obsession and she let me borrow her new OPI purch from the Pirates of the Caribbean line, "Skull and Glossbones". Someone is getting at home *mani*pedi* tonight : )


All in all it was a fabulous day. Bridesmaids is HI-LARIOUS, BTW.

New Hunting Grounds: Pier 1

Target and TJ Maxx top my list of places I constantly haunt for fabulous clearance items but I'm ready to make an addition to my reprotoire: Pier 1. I've always loved Pier 1 but I am well aware that I can't be going up in there all the time, buying things full-price so I tend to steer clear.


Well, yesterday I decided to take some "me time" before picking up my daughter and I had a P1 gift card in tow. Much to my surprise, I was able to stretch that $20 pretty far!


Here is my P1 Haul:

There were so many deals to choose from beyond what I bought. It was hard to choose but I didn't want to spend much more than my gift card (I went little over $6 beyond the GC).

Adventures of a Thrift Store Shopper

Shopping at thrift stores has become an obsession for me. I can only compare it to what men feel like when they go hunting, it's the thrill of the kill! Nothing gets me more excited than finding a gem amongst the seemingly endless racks of riff-raff. For example, we have a thrift store in town that has occasional 50% off days and they get hit hard! I find it far too tempting to buy things for $2 and $3 rather than their usual $4 and $6 so I usually make it a point to hit it up with the rest of the thrifty folk. During the last sale I attended I found a perfect L.B.D. How much did I pay? $3!!! AMAZING! 


Usually I have an accomplice to go with me for moral support and to see who can nab the best find. I own a Dior sweater thanks to another 50% day when I was victorious. How much? $5!!! 


Sometimes, I will hit up the thrift store on my lunch break and this happens...


Couldn't quiiiiite get the zipper up myself so I turned that bad boy around to make sure this would be a smart purchase. I think I paid $6 or so, and it is a Dillard's-ish brand that retails between $40-$80. It's in perfect condition and I love it. I wear it to work which means I have to wear it with the correct side in front, paired with a brown cardigan and some flats (in a metallic color like that of the dress) from Target for about $4.
